The situation

Three kitchens under one group were seeing small cockroaches during service hours — a sign of crowded harbourages. Previous monthly spraying had knocked numbers down briefly each time, but activity always returned within weeks, and one outlet was weeks from a food safety audit.

Our approach

We replaced calendar spraying with a baiting programme. Each kitchen got a night inspection to map harbourages, gel bait applied inside hinges, motor housings and drawer runners, drain treatments for the larger American cockroaches, and monitoring traps checked fortnightly. Kitchen managers got a closing-time hygiene checklist covering the gaps treatment cannot reach.
