Clearing German cockroaches from a busy restaurant kitchen

The situation
A kitchen running two services a day, with cockroaches appearing around the line at night and staff reporting sightings during prep. Retail spray had been used repeatedly, which had pushed the population out of one area and into three, and a hygiene audit was due.
Our approach
Spraying stopped first, because the residue makes gel bait unattractive and delays everything. Gel bait went into hinges, motor housings, drawer runners and the voids behind the line, with placements mapped so the kitchen team could clean around them. Drains and the waste store were treated separately, since that is where the pressure was coming from. Visits were scheduled after close so no service was lost, and a written record was produced after each one for the audit file.
